Prevent Bloating with this Arugula Salad

Bitter herbs such as arugula, dandelion, and mustard greens are incredibly powerful for your gut health. Their bitterness helps our body produce stomach acid, enzymes, and bile, all necessary for proper digestion. Having an arugula salad right before the main course of a meal will allow your body to prep for digestion and likely prevent or decrease bloating.

The best part? It’s incredibly easy. It’s all about the dressing!

Recipe

Ingredients:

  • 2 cups of baby arugula

  • 2 tbsp olive oil

  • 3/4 tsp of honey

  • 2 tsp balsamic vinegar

  • 1 tsp yellow mustard

  • sea salt and pepper to taste.

  • 1 handful of pine nuts

  • 1-2 tbsp sesame seeds

  • 2 tbsp of pumpkin seeds


Method:

For the dressing:

  • Mix the olive oil, honey, balsamic vinegar, yellow mustard, salt, and pepper together, whisking vigorously until you reach a creamy consistency.

For the rest:

  • In a bowl, mix the dressing with the arugula, pine nuts, pumpkin seeds, and sesame seeds.

    This is a side dish that I can't get enough of!
